Update from Bloomington & Raw Granola Balls Recipe

I love Bloomington!
I have been having such a good time here – being very productive during the day (somewhat surprised, but it’s true!) & otherwise enjoying spending time with my sister in the evenings, going for walks through town and the university, going to the climbing gym, meeting her really lovely friends & getting some much-needed time and space away from my life in Vancouver.
I love the small-town calm and peaceful energy here… it is like a giant campground. Everyone has a front porch around here, it seems. Everything is green & in bloom & there are wild bunny rabbits everywhere! Every day at lunch time, I sit out on the porch of my sister’s house with a mug of green tea & just take it all in.
I’ve also been pleasantly surprised at how liberal & progressive Bloomington is; it is an oasis of sorts, I am told. The town is also very health-conscious and has a strong constitution of local, organic foods & sustainability. I’ve been happy to discover an abundance of quality veggie, vegan, raw-friendly & allergen-free food! If you are ever visiting Bloomington, be sure to check out Sahara Mart & Bloomingfoods, as well as the Saturday farmer’s market, all of which have an impressive selection of organic produce & foods. It has been a pleasure shopping and eating here!
Raw Granola Balls with cranberries
I’ve been making lots of raw food for my sister, which she loves! She has been dabbling in raw food for some time and always enjoys trying out new raw foodie goodies. For dessert, I’ve been making several different versions of my Granola Balls – they are super easy to make and I would love to share the recipe here with you today. Here it goes:
Ingredients
- 3 cups oats
- 1/2 cup dates
- 1/4 cup shredded coconut
- 3 tablespoons coconut butter
- 4 tablespoon honey
- handful dried cranberries
- handful dried apricots
Procedure
Throw everything into a food processor and grind it up.
Once this step is complete, it’s time to press the mixture into balls.
And now it is time to munch them down!
